What You'll Need
· ½ cup white corn syrup
· 3 Tbsp dark roasted peanut butter
· 1 Tbsp coconut oil
· ½ cup gluten-free ONLY OATS oat bran
· 1 cup gluten free Rice Krispies
· ½ cup quinoa puffs
· ½ cup raw sunflower seeds
· ½ cup gluten free dark chocolate chips
· 1 Tbsp coconut oil
· 1 Tbsp raw pumpkin seeds
· 1 Tbsp smoked sea salt
Directions
1. In a microwave safe bowl add the corn syrup, peanut butter and coconut oil and cook on high for 1 ½ -2 minutes until nice and bubbly. Remove and stir well.
2. Add the ONLY OATS oat bran, Rice Krispies, quinoa puffs and sunflower seeds and stir well.
3. Line a 9 x 13 pan with parchment paper. Spread the mixture into the pan, wet hands lightly and pat mixture evenly down. Put into the freezer for 20 minutes.
4. In a small saucepan, melt the chocolate chips with the coconut oil
5. Remove from freezer and spread warm chocolate evenly over the bars. Sprinkle the pumpkin seeds and smoked sea salt on top of warm chocolate.
6. Place back in freezer for 10 minutes.
7. Remove and cut into 12-15 bars.
